The Department of Food, Bioprocessing and Nutrition Sciences ( FBNS) encompasses diverse disciplines in research, extension, and teaching. Our programs combine the disciplines of chemistry, engineering, microbiology, food, bioprocessing, nutrition, and sensory science. FBNS is home to 3 undergraduate majors and several graduate programs. We provide a world-renowned education and engage with a variety of stakeholders to solve diverse industry-related problems that involve research, education, and extension services. We build professional and industry relationships and active partnerships with national corporate and government centers, including USDA programs.Home to more than 100 faculty and staff who work with and guide some 500 students, we are spread over a growing network of departmental facilities in North Carolina - Schaub Hall and the Howling Cow Dairy Education Center and Creamery in Raleigh, the Plants for Human Health Institute in Kannapolis, and the Center for Marine Sciences and Technology in Morehead City. Essential Job Duties
The Department of Food, Bioprocessing and Nutrition Sciences ( FBNS) is seeking a highly motivated and qualified scientist to manage and oversee research laboratories, including the dairy pilot plant and associated analytical labs focused on dairy processing, flavor science, and flavor chemistry.
The ideal candidate will bring strong research and management skills, a deep understanding of laboratory operations, and a commitment to safety, efficiency, and innovation. This role requires a collaborative, adaptable professional who can work closely with principal investigators (PIs), research staff, and graduate students to support research and educational activities.

  • Manage daily operations of the dairy pilot plant and related research laboratories, including oversight of equipment, supplies, software, and documentation.
  • Schedule and coordinate equipment use; ensure all systems are functional and properly maintained.
  • Train students in the safe and correct use of laboratory equipment, with emphasis on dairy pilot plant operations.
  • Operate, troubleshoot, and maintain core equipment such as the MicroThermics system, FTIR, evaporator, and membrane unit operations.
  • Demonstrate proficiency in liquid and gas chromatography (HPLC/LC; GC-MS preferred).
  • Maintain detailed records of training, equipment usage, cost tracking, sanitation, and safety protocols.
  • Set up, operate, and perform routine maintenance on laboratory instruments; support assembly and testing of new instrumentation.
  • Manage inventory and anticipate future needs by monitoring supply levels and placing orders.
  • Ensure strict adherence to university and federal safety standards.
  • Work independently, using sound judgment to resolve technical issues as they arise.

Other Responsibilities

  • Stay informed of advancements in scientific literature and lab technologies; update protocols as needed to support evolving research goals.
  • Design and troubleshoot experiments; assist in protocol development and data analysis.
  • Support budgeting, purchasing, inventory control, and equipment maintenance.
  • Train and supervise staff and students on safety, lab procedures, and equipment use.
  • Provide research and production support as needed; serve as a key resource to lab users.
  • Assist with grant preparation, data reporting, and manuscript development.
  • Perform other duties as necessary to support the lab's mission and research objectives.

Qualifications






Minimum Education and Experience
  • Bachelor's degree with at least 3 years of relevant professional experience, preferably as a Research Assistant, or a Master's degree, with preference for a doctorate degree (or equivalent degree or experience).
Other Required Qualifications

  • Demonstrated experience with research presentation and publication; familiarity with grant proposal development.
  • Strong analytical skills and experience in data collection, interpretation, and
    documentation.
  • Experience in lab management, including inventory oversight, budgeting, and
    expense tracking.
  • Excellent written and verbal communication skills.


Preferred Qualifications

  • 2-3 years of relevant experience in a laboratory, research, engineering, or industrial food science setting.
  • Background in dairy processing and/or chemistry preferred.
  • Proficiency in maintaining and operating pilot plant equipment and
    chromatographic techniques (HPLC, LC; GC-MS preferred).
  • Proven ability to train and supervise students and staff in complex procedures
    and ensure compliance with safety protocols.
  • Excellent organizational, interpersonal, and communication skills.
