Job Summary

Working as the Pastry Sous Chef, you will be responsible for the successful operation of the pastry department within the Culinary Department at Santa Clara University. You will assist in the supervision, preparation, and production of various pastries and baked goods, develop seasonal and holiday menus, and support catering initiatives. You will also work closely with the Executive Chef and Pastry Chef to ensure quality, presentation, and cost control. This is an exciting opportunity for an energetic, entrepreneurial culinary professional.

Essential Duties and Responsibilities:

  • Oversee daily operations of the pastry department, coaching staff on a wide variety of techniques and skills.

  • Bake breads, pies, cakes, cookies, and other pastries as necessary per production and catering sheets.

  • Assist the Pastry Chef in ensuring proper food preparation using approved recipes, prescribed production standards, and appropriate equipment.

  • Develop weekly, seasonal, and holiday desserts; execute catering events and assist in menu planning and creation.

  • Clean equipment and workstation thoroughly before leaving the area; complete assigned shift work in a timely and thorough manner.

  • Receive, check, and properly store all incoming products.

  • Assist the Executive Chef with managing cost controls, controlling account expenditures, and rolling out new culinary programs in conjunction with company marketing and culinary teams.

  • Full-time availability required, Sunday to Thursday schedule.

Preferred Qualifications:

  • A.S. degree in Culinary Arts or equivalent experience.

  • Three years of baking or pastry experience and the ability to accurately follow recipes.

  • Progressive culinary/kitchen management experience, depending on formal degree or training.

  • High-volume, complex foodservice operations experience is highly desirable; institutional and batch cooking experience is a plus.

  • Catering experience preferred.

  • Strong knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation.

  • Willingness to participate in client satisfaction programs and activities.

  • ServSafe certification is highly desirable.

  • Comfortable in a fast-paced, changing environment.
